The grain eau de vie (malt wine) is distilled from equal parts Rye, Corn and Malted Barley. The malted barley provides the backbone of the drink. The corn gives a rich sweetness and the rye characterizes the spicy notes. The new distillate is distilled three times in a small pot still. Then the distillate is partially distilled a fourth time with carefully selected herbs such as juniper, liquorice root and aniseed seeds. Finally, the malt wine is joined together with the other ingredients and the alcohol content is reduced to 45% for the lagering in small wooden barrels.
